Four Ingredient Funfetti Cake Batter Dip

 This is the other sweet dip I made for my friends baby shower. This one was a hit, too!




Four Ingredient Funfetti Cake Batter Dip

Ingredients 

8 oz cream cheese, softened to room temperature 
8 oz whipped topping, thawed (cool whip) 
1/3 - 2/3 cup milk, (start at 1/3 and go from there) 
1 box Funfetti cake mix, (unprepared) 
sprinkles, for garnishing


Instructions 
Heat up the cake mix before using. I recommend adding the cake mix to a microwave-safe shallow bowl and heating in 30 second increments until it reaches an internal temperature of 160-165°F.
Add whipped topping and cream cheese to a large mixing bowl and beat with a hand mixer until smooth and creamy. 
Add cake mix and 1/3 cup milk and stir with a wooden spoon until combined. 
Dip will be very thick, so add more milk, a little at a time, until you get to your desired consistency. I used about 2/3 cup for my dip. 
Serve garnished with sprinkles and whatever dippers you prefer. Graham crackers, animal crackers, vanilla wafers, pretzels, fresh fruit, etc.

Brownie Batter Dip

This is one of two dips I took to a friends baby shower a few months ago. The food theme was dips, and I brought two sweet ones. They were both a hit!

Brownie Batter Dip


Ingredients
8 ounces cream cheese, room temperature 
18.3 ounces brownie mix 
¼ cup milk 
¼ cup mini chocolate chips 
1 cup whipped topping, thawed


Instructions
Add the dry brownie mix to a large microwave-safe bowl. Microwave in 30-second increments, stirring after each, for a total of 2 minutes. Set aside. 
In a large bowl, use an electric mixer to beat the softened cream cheese on medium-speed until smooth. 
Add the brownie mix and milk; beat until well combined and smooth. 
Gently fold in the whipped topping until completely blended. 
Fold in the chocolate chips. 
Transfer the dip to a serving bowl, and top with additional mini chocolate chips, if desired. 
Serve immediately with your favorite dippers, such as pretzels, graham crackers, cookies, or fruit.

Notes 
It is important to heat treat the brownie mix before beginning so that it will be safe to consume. Please do not skip this step. 
Beating the cream cheese, brownie mix and milk together first minimizes the mixing once the whipped topping is added. This will help prevent the dip from “deflating.” 
It is important to gently fold in the whipped topping so it doesn’t deflate.

Fresh Pico de Gallo

Our neighbor brought over a huge grocery sack of tomatoes for us from his garden. I knew that I would be making some pico with them right away, because I LOVE pico de gallo!!!!! I combined a couple of recipes I found and made this. You can eat it right away, but it definitely tastes better when it has had time to chill, and the flavors have all blended together.
So yummy!!!!

Fresh Pico de Gallo

8-10 tomatoes, seeded
1/2 red onion, finely chopped
2 medium cloves garlic
juice of one lime
zest of one lime
1 Tbsp olive oil
4 Tbsp chopped fresh cilantro
1 tsp course salt
1/2 tsp black pepper

Mix all ingredients and chill over night.

Dorito Dip

 I have made this dip a few times now. It is always a big hit, and it is healthy too!!! I am a Nacho Cheese Dorito lover myself, and I never dreamed of ever dipping my Dorito in anything as I think they are the bee's knees by themselves...... BUT, this dip changed my thinking! This dip is so good that you can eat it by the spoonful (as did one of my girlfriends!!!), but the cheesy Doritos taste really good with it! This is a perfect recipe for an appetizer for a football party.....or just for your own enjoyment. I won't judge. : )

Ingredients
  • 1 (24 oz)canister cottage cheese
  • 2 tomatoes, diced
  • 2 avocados, diced
  • 1/2 c. canned corn, drained
  • 3 green onions, chopped
  • 1/2 tsp. garlic powder
  • salt and pepper to taste

Instructions
  • Spoon cottage cheese into a medium-sized bowl. Fold in remaining ingredients until well combined. Serve with Doritos.

Best Fruit Dip EVER

Strawberries are back in season and I am one happy girl! I love them. And I love a good fruit dip to go with them, so when I saw this recipe over on Pinterest I had to try it out. We all loved it! Very simple and very yummy, with very few ingredients. A winner all around in my book.

1 8oz pkg Cream Cheese, softened
1 7oz jar Marshmallow Cream
1 cup Powdered Sugar

Instructions
Mix all ingredients until combined.
Enjoy with your favorite fruit!

Cookie Dough Dip

Holy Cats!!!! Another AMAZING find from Pinterest!! I made this for a baby shower this past week, and it was a HIT!!! It was gone in about 10 minutes!!! No kidding!! Everyone loved it! I was so glad I tried a bite of it before I left, because I wouldn't have had any otherwise : ) Try it now....it is sooo easy to make! It would be great for a fun snack for General Conference this weekend, or a fun treat for Easter next weekend : ) Happy Friday everyone!!!

Cookie Dough Dip

1 8oz pkg cream cheese, softened
1/2 cup butter, softened
1 cup powdered sugar
2 Tbsp brown sugar
1 1/2 tsp vanilla
1 cup chocolate chips
1 cup white chocolate chips

Cream together cream cheese, and butter. Add powdered sugar, brown sugar and vanilla. Mix well. Add if chocolate chips and white chocolate chips and mix until combined. Serve with graham crackers, apple slices, etc.

Pineapple Salsa

The hubs and I love salsa, and we love pineapple too!!!! So, I was soooo intrigued when I saw this recipe, and HAD to try it!!! It was so yummy!!!! We put it on top of some Chicken Taco's that I will post about next (which is what you use the remainder of the dressing for)!!!! So tasty. But, I totally could have eaten this salsa by the spoonful! Who's to blame me? It was THAT good!!!


Pineapple Salsa

2 cups pineapple chunks, diced
2 tomatoes, seeded and chopped
2 cloves garlic, minced
1 jalapeno pepper, seeded and finely diced

In medium bowl, combine pineapple, tomatoes, garlic and jalapeno. Stir in 2 Tbsp of the dressing, reserving the rest of the dressing.

Dressing:
1/4 cup lime juice
1 tsp sugar
1/8 tsp salt
1/8 tsp pepper
3 Tbsp extra virgin olive oil
2 Tbsp chopped cilantro

In a small bowl, whisk together lime juice, sugar, salt, and the pepper. Slowly whisk in olive oil until blended. Stir in cilantro.

7 Layer Dip

Here is a basic, simple, yet delicious appetizer! We had this many times growing up! So yummy, and so easy!!!!



7 Layer Dip

1 16oz can Refried Beans
1 cup guacamole (I will only eat homemade)
1-1 1/2 cups sour cream
1 cup shredded cheddar cheese (we prefer Sharp Cheddar)
1/2 cup chopped tomatoes
1/4 cup diced olives
1/4 cup diced green onions

Heat refried bean in small saucepan until desired temperature (we like it to be at a warm to hot temp). Spread into a small glass dish (I used a 8x11.5 dish. You can also use a 9 inch pie dish). Spread guacamole over refried beans. Spread sour cream over guacamole. Sprinkle cheese, then tomatoes, then olives, then green onions over the top. Serve with either chips, crackers, veggies, or Taquitos. Enjoy : )

Seven-Point Spread

1 pkg. (8 oz) Cream Cheese, softened
1/4 cup sliced jalapeno peppers for nachos, drained and chopped
1/2 lb boneless skinless chicken breasts, cooked and shredded
1 cup Mexican Style Shredded Cheese
1/2 cup sour cream
1/2 cup chunky salsa
2 green onions, sliced
crackers, chips or sliced veggies for dipping

Spread cream cheese onto bottom of 9 inch pie plate; top with layers of peppers, chicken and shredded cheese. Microwave on High 2-3 minutes, or until cheese is melted. Top with layers of sour cream, salsa and onions. Serve with chips, crackers and veggies.

Cool Cucumber Salsa

My sister was visiting and we both LOVE cucumbers AND salsa. So we set out to find/come up with a really great Cucumber Salsa recipe. This one was pretty good!!! I needed more "kick" to mine, but my sister like it this way better!! It was a great, cool and easy summer recipe.


Cool Cucumber Salsa

2 medium cucumbers - peeled, seeded, and chopped
2 medium tomatoes, chopped
1/2 cup chopped green bell pepper
1 jalapeno pepper, seeded and minced
1 small onion, chopped
1 clove garlic, minced
2 tablespoons lime juice
1 teaspoon minced fresh parsley
2 teaspoons minced fresh cilantro
1/2 teaspoon dried dill weed
1/2 teaspoon salt

In a medium bowl, stir together the cucumbers, tomatoes, green pepper, jalapeno pepper, onion, garlic, lime juice, parsley, cilantro, dill, and salt. Cover and refrigerate for 1 hour.

Easy-peasy Caramel Apple Dip

This apple dip is so easy to make and taste really yummy as well. It is a hit with all my boys (as well as my hubby and I!).

1 pkg. (8 oz.) Cream Cheese, softened
1/2 cup firmly packed brown sugar
1/2 tsp. vanilla

Beat cream cheese in small bowl with electric mixer on medium speed until creamy. Add brown sugar and vanilla; beat until well blended.
Spoon into serving bowl.
Enjoy!

Cheese and Cracker Warm-up


This dip/appetizer is sooooo yummy!!! I am not joking!! Every time I make this, I always have tons of people asking for the recipe!! And what makes it even better, is how EASY it is to make!!!

You can dip anything from crackers, chips, veggies, etc. in it!! You can also change it up with different ingredients!! Enjoy!!

Cheese and Cracker Warm-up

8 oz pkg. cream cheese, softened
1 1/2 cups sharp cheddar cheese, shredded
1/3 cup mayonnaise
1/3 cup green onions, sliced
1/3 cup bacon bits

Mix cream cheese, shredded cheddar cheese, mayo, and green onions in a pie plate of ovenproof serving dish. Bake at 350 degree's for 15 minutes, stirring once during baking. After baking, sprinkle bacon bits on top. Serve warm with crackers, chips and/or veggies.
