Oatmeal Chocolate Chip Peanut Butter Bars

Oh were these so good! I am fast becoming more of a "cookie bar" fan than I am a "cookie" fan. Can you believe that?! The peanut butter chips with the chocolate chips with the oatmeal cookie was a perfect combo. Plus, it was so quick to make.

Oatmeal Chocolate Chip Peanut Butter Bars

1 1/2 cups flour
3/4 tsp baking soda
1/4 tsp salt
1 cup oatmeal (old fashioned or quick oats work just fine)
1/2 cup (1 stick) butter, softened
1/3 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar
1 tsp vanilla
1 egg
1 egg yolk
1 cup peanut butter chips
1 cup chocolate chips (semisweet or milk chocolate work)

Preheat over to 350 degree's. Prepare a 9x13 inch pan and set aside.
In a medium bowl, mix together flour, baking soda, salt, and oatmeal. In a large bowl, cream together butter and sugars. Add in the vanilla, egg, and egg yolk. Mix well. Add the dry ingredients to the wet ingredients and mix until combined. Add half the peanut butter chips and half of the chocolate chips. Mix to combine.
Press cookie dough mixture into prepared pan. Sprinkle remaining peanut butter chips and chocolate chips on top. Bake in oven for 16-20 min., or until lightly browned on the edges. Do not over bake as that will dry out the bars! Let the bars cool in the pan 20-30 minutes before cutting them into bars.

Mint Chip Ice Cream Brownie Squares

This was a yummy Pinterest find! I saw this one shortly after St. Patricks Day last year, and was excited to kake it for our festive dessert for St. Patty's this year. It is very similar to the Grasshopper Pie my family made for many Birthday's. 

Mint Chip Ice Cream Brownie Squares

Ingredients 
1 box brownie mix, baked in 9×13 inch pan (check sizes on back of box)
1 1/2 quart mint chip ice cream
1 cup dark or semisweet chocolate chips
1/2 cup cream (heavy or regular)
1/4-1/2 teaspoon pure peppermint extract (I left this out. The mint chip ice cream is enough Mint flavor IMO)
15-20 oreo cookies
1 8-ounce container whipped topping


Instructions 
Line a 9×13 inch pan with foil and let foil extend at least 1 inch over edges of pan. Bake brownies according to package instructions. Cool completely and place in freezer to chill. Soften ice cream until you can easily stir it with a spoon. Gently spread in an even layer over brownies. Place pan in freezer to chill. Place chocolate chips in a bowl. Heat cream in microwave until hot and bubbly. Pour over chocolate and cover bowl with plastic wrap. Let sit 5 minutes and then whisk until smooth. Whisk in peppermint extract and let chocolate mixture cool to close to room temperature. Drizzle in an even layer over ice cream layer in pan. Sprinkle crushed cookies evenly over chocolate and lightly press in with your hands. Top with whipped topping and spread out into an even layer. If desired, sprinkle shaved or curled chocolate, or sprinkles on top. Freeze at least several hours (and up to several days, covered), until firm. When ready to serve, let sit at room temperature for about 10-15 minutes to soften. Remove dessert from pan using foil and then cut into squares.

Butter Bars

I found this recipe on Pinterest, and was pleasantly surprised to find I had all the ingredients on hand. After reading the rave reviews of this recipe (I always read the comments before I try/buy something new) I had to try it out that night. They were just as good as as I had hoped, and even better the next morning for Breakfast! :)

Butter Bars

Crust:
1 yellow cake mix
1 egg
1/2 cup butter (1 cube), melted

 Filling:
1 8 ounce package cream cheese, softened
2 eggs
2 teaspoons vanilla
1 stick butter, melted
3 cups powdered sugar

 Combine crust ingredients and pat into a 9 X 13 pan. Beat cream cheese, eggs, and vanilla until smooth. Add butter and sugar. Mix well. Pour over crust. Bake at 350 degrees for 45 minutes.

 Variations: use lemon cake mix and add lemon juice and zest to filling, use chocolate cake mix and add 3/4 cup peanut butter to the filling.

Funfetti Gooey Bars

My boys love to look through my Dessert board on Pinterest and pick out all the yummy things they want me to make for them, (or help make with me). After looking one day my 10 year old son begged me to make these yummy cake bars. They were a hit and didn't last long around this house!


Funfetti Gooey Bars

1 yellow cake mix
1 stick (1/2 cup) butter, softened
1 egg
2/3 cup sprinkles, divided
1/2 cup (from a 14 ounce can) sweetened condensed milk
1 cup white chocolate chips

 Instructions:
 Preheat oven to 350 degrees. Line a 9x9” pan with foil and spray liberally with cooking spray. Add cake mix, butter, and egg to the bowl of an electric mixer fitted with a paddle attachment. Mix until a thick dough forms. Add 1/3 cup sprinkles and stir until incorporated. Press about 2/3 of the dough into the bottom of the prepared pan. Sprinkle with white chocolate chips and remaining 1/3 cup sprinkles. Pour sweetened condensed milk over the top. Separate remaining dough into small balls and evenly space over the top of the bars. Press down to flatten. Bake bars for about 30 minutes, or until they just begin to brown. Cool completely before slicing, otherwise the mixture will be too gooey to cut.

Marshmallow Brownies

First off can I just say it is a pet peeve of mine when people spell Marshmallow "Marshmellow"?? It totally bugs big time. Anyhow....

I totally loved these brownies! My hubs wasn't as crazy about them, he doesn't like frosting on his brownies. I love it. The kids and I happily gobbled them up. I thought they were even better the next day after getting a little crunchy on the top. So good.

Marshmallow Brownies

1 c. margarine
2 c. sugar
1/3 c. cocoa
4 eggs
1 1/2 c. flour
1 tsp. salt
2 tsp. vanilla
Soften margarine and blend in 2 cups sugar and cocoa. Beat together and add 4 eggs, one at a time. Add flour, salt and vanilla. Spread on large (10x15x1 inch) greased cookie sheet. Bake 25 minutes at 350. Remove from oven and cover entire top with 1 package of miniature marshmallows. Return to oven for 3 minutes, until soft and puffy. Cool and frost with chocolate frosting. Chocolate Frosting: 1 stick margarine (1/2 c.), softened 1/4 cup milk 1-2 tsp vanilla (depending on your taste) 3 tablespoons of cocoa 2-3 cups of powdered sugar Mix all ingredients with a hand mixer until smooth. Add more powdered sugar or milk until you reach desired consistency and spread on top of bars.

Blueberry Crumble Bars

My Hubs loves fruit dessert dishes. Especially cobblers. So when I saw this Blueberry Crumble recipe I knew I needed to make it for him.I normally am not a huge fan of Fruit goodies, but this dessert I will make an exception for! And it makes a good breakfast, too, not that i would know or anything....

Ingredients
1 3/4 cup Quaker Oats, uncooked (quick or old-fashioned)
1-1/2 cup all-purpose flour
3/4 cup brown sugar, firmly packed
1/2 cup chopped nuts (I left out the nuts)
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup butter; melted
2 cups fresh or frozen blueberries
1/2 cup granulated sugar
3 tablespoons water
2 tablespoons cornstarch
2 teaspoons lemon juice

 Heat oven to 350 F and grease an 11×7-inch baking pan Combine oats, flour, brown sugar, nuts, baking soda and salt Add butter, mixing until crumbly. Reserve 3/4 cup mixture; press remaining mixture onto bottom of prepared dish. Bake 10 minutes. Meanwhile, combine blueberries, granulated sugar and 2 tablespoons water in medium saucepan. Bring to a boil, simmer 2 minutes, uncovered, stirring occasionally. Combine remaining 1 tablespoon water, cornstarch, and lemon juice; mix well. Gradually stir into blueberry mixture; cook and stir about 30 seconds or until thickened. Spread over partially baked base to within 1/4 inch of edge; sprinkle with reserved oat mixture. Press topping down into blueberries slightly. Bake 18 to 20 minutes or until topping is golden brown. Cool on wire rack; cut into bars. Store tightly covered.

Smore's Cookie Bars

My sister-in-law, Stacey, had shared this link a few months back. She had made them, and highly recommended them!!! And since I love all things Smore's....I HAD to try them!!!! They were so very good!!!!! The mixture of the peanut butter chips with the chocolate chips was soooo fun, and delicious!! And what a fun way to enjoy Smore's while staying indoors :)

Smore's Cookie Bars

Ingredients:
1 pouch Betty Crocker Sugar Cookie Mix
1 cup graham cracker crumbs
1 cup butter or margarine, melted
2 cups chocolate chips
1 cup peanut butter chips
4 1/2 cups mini marshmallows

Directions:
Preheat oven to 375. In large bowl, mix together sugar cookie mix and graham cracker crumbs. Stir in melted butter, and press into a aluminum foil-lined 9x13 dish. Bake for 18-20 minutes, or until set.
Immediately pour chocolate chips and peanut butter chips over baked layer. Let stand for 3-5 minutes until they begin to melt. Use a spatula to spread melted chocolate and peanut butter chips evenly over the cookie layer.
Set oven to broiler. Sprinkle marshmallows evenly over melted chocolate. Broil with top of cookie bars 4-5 inches away from heat for about 30 seconds, or until marshmallows are toasted. (Be careful, this happens FAST!!!!)
Allow to cool, and then cut into bars.

Creamy Lemon Crumb Squares

I found this recipe floating around Pinterest and of course had to try them. I am pretty sure I have mentioned before how much I love Lemon-y desserts. They were so very yummy and did not disappoint.

CREAMY LEMON CRUMB SQUARES

1 ⅓ cup all-purpose flour
½ teaspoons salt
1 teaspoon baking powder
1 stick (1/2 cup) butter, slightly softened
1 cup brown sugar (lightly packed)
1 cup oats
1 can (14 ounce) sweetened condensed milk
½ cups lemon juice
zest of 1 lemon

Preheat oven to 350 degrees.

Mix butter and brown sugar until well combined.

Sift together flour, salt, and baking powder.

Add oats and flour to butter/sugar mixture and mix to combine.

Press half of oat crumb mixture into the bottom of an 8 x 11 inch pan. You can use a 9 x 13 pan; it will just be thinner.

Mix together condensed milk, lemon juice, and lemon zest. Spread onto the bottom layer of the crumb mixture. The other half of the crumb mixture mix and knead together with clean hands so that the butter that you added earlier gets incorporated then crumble on top of lemon layer but don’t press.

Bake for 20 to 25 minutes, or until golden brown.

Allow pan to sit on counter for 30 minutes after baking. Cut into squares and refrigerate for a couple of hours or until cool.

Serve cool. Makes around one dozen.

Gooey Cookies and Cream Chocolate Cake Bars

I made these for my sons birthday last month. Totally yummy and ooey-gooey! FYI: Have a glass of milk handy when eating though.




Gooey Cookies and Cream Chocolate Cake Bars

14 Oreo Cookies, broken into bite size pieces

14 ounce can sweetened condensed milk
8 tablespoons (1 stick) unsalted butter, softened
1 large egg
1 1/2 cups chocolate chips
1 Devils Food Cake Mix
1. Preheat oven to 350 degrees F. and line a 9×13 inch baking pan with tin foil sprayed with non-stick cooking spray.
2. Place cake mix, butter and egg into a large bowl, mixing to combine. Use your hands, it works much quicker :) Press into prepared baking pan. Top with broken pieces of cookies.
3. Pour sweetened condensed milk over cookies and top with chocolate chips. Bake for 23-25 minutes, until cooked through. Remove from oven.
4.  After 5 minutes of cooling, run a plastic knife around edges to loosen, this makes it much easier to remove from foil.  Let cool completely, remove foil from pan, then cut into squares.  I cut off all of the edges before cutting into squares (makes for neater squares), but do whatever you’d like!!

S'more Cookie Bars

I have an obsession, I think. It is with recipes with the word "S'mores" in it. I have to try it. I really do. This was sooooo good!!! Very rich too!!! Now that summer is coming to a close (you wouldn't know with the over 100 degree's we are having right now), this is a perfect way to still enjoy S'mores, but without all the work of going camping!!!!



S'mores Cookie Bars

1/2 cup unsalted butter, room temperature
1/4 cup brown sugar
1/2 cup granulated sugar
1 large egg, room temperature
1 tsp vanilla extract
1 1/3 cups all-purpose flour
3/4 cup graham cracker crumbs (about 8 graham crackers)
1 teaspoon baking powder
1/4 teaspoon salt
2 king-sized milk chocolate bars
1 1/2 cups marshmallow Fluff (not melted marshmallows because they harden when they cool)

Preheat oven to 350 degrees F. Grease and/or line an 8-inch square baking pan.

In a large bowl, cream together butter and sugar until light. Beat in egg and vanilla.

In a small bowl, whisk together flour, graham cracker crumbs, baking powder and salt. Add to butter mixture and mix at a low speed until combined. Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan. Don’t worry if it seems thin; the baking powder will allow it to rise.

Place chocolate bars over dough (don’t layer the bars, just break them to fit if you need to), then spread the marshmallow Fluff over the chocolate bars. Finally, top the Fluff with the remaining dough by forming the dough into sheets with the palm of your hands and laying it down (as shown above). Don’t worry if the dough isn’t covering everything! It’ll spread out as it bakes.

Bake for 30 to 35 minutes, until lightly browned. If the top is browning too quickly, you can always cover it with tin foil for the remaining baking time. Cool completely before cutting into bars. If you don’t allow them to cool completely, they will crumble when you try to cut them.

Brownie Goodie Bars

I cant believe I haven't posted this recipe yet. I found it on the back of a Betty Crocker brownie box about 5 years ago and have been making it ever since. So, so GOOD! I have made it for family functions, and all wanted the recipe, too. Such a hit. My picture doesn't do it justice. We had eating most of it so I had to grab the best looking piece quickly (before someone ate it) to snap a pic. Now go out and buy the ingredients for it right now. You know you want too.

1 box of Brownie mix
Water, vegetable oil and eggs called for on brownie mix
Container of Vanilla frosting (I like the whipped kind)
3/4 cup salted peanuts, coarsely chopped
3 cups crispy rice cereal
1 cup peanut Butter
1 bag (12oz) semisweet chocolate chips

Heat oven to 350 degrees. Make brownies as directed for 9 x 13-inch pan. Cool completely.
Frost brownies with frosting. Sprinkle with peanuts; refrigerate. Meanwhile, in large bowl, measure cereal; set aside. In 1 quart saucepan, melt peanut butter and chocolate chips over low heat, stirring constantly. Pour over cereal in bowl, stirring until evenly coated. Spread over frosted brownies.
Refrigerate about 30 minutes or until set before cutting.
Store covered in fridge.

Caramel Apple Cheesecake Bars w/ Streusel Topping

Oh wow...what do I say?! This was Seriously. So. Good. I am someone who loves trying different recipes. I don't like having the same thing over and over. But, I would change for this. I could eat this every night....if my waistline would let me!!!!! OH MY...SOOOOOOO GOOD!!!!! I think I have found my new favorite dessert of ALL TIME!!!!



Caramel Apple Cheesecake Bars w/ Streusel Topping

Base:
2 cups all-purpose flour
1/2 cup firmly packed brown sugar
¼ teaspoon salt
½ teaspoon cinnamon
1 cup (2 sticks) butter, softened

Cream Cheese Layer:
2 (8-ounce) packages cream cheese, softened
1/2 cup sugar
2 large eggs
1 teaspoon vanilla extract

Apples:
3 Granny Smith apples, peeled, cored and finely chopped
2 tablespoons sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Streusel Topping:
1 cup firmly packed light brown sugar
1 cup all-purpose flour
½ teaspoon cinnamon
1/2 cup quick cooking oats
1/2 cup (1 stick) butter, softened

1 cup caramel sauce (homemade recipe below)

Preheat oven to 350 degrees F.

In a small bowl, stir together chopped apples, two tablespoons sugar, cinnamon, and nutmeg. Set aside.

In a medium bowl, combine all the streusel topping ingredients and mix until crumbly. Set aside.

In a medium bowl, combine flour and brown sugar. Cut in butter with a pastry blender or two forks until mixture is crumbly but combined. Press evenly into a 9X13-inch baking pan lined with aluminum foil. Bake for 10 minutes or until lightly browned.

While the crust is baking, in a large bowl, beat cream cheese with 1/2 cup sugar until smooth. Then add eggs, one at a time and then the vanilla. Mix well. Pour over the warm crust.

Spoon the apple mixture evenly over the cheesecake layer. Sprinkle the streusel topping over the apples. Bake for 30 minutes until the filling is set.

Cool the bars to room temperature. Drizzle with the caramel topping (or plate individual slices and drizzle with topping one by one).

Caramel Sauce:
4 tablespoons butter
1 cup firmly packed light brown sugar
½ cups half-and-half or cream
Pinch of salt
1 tablespoon vanilla

Mix butter, brown sugar, half-and-half or cream, and salt in a saucepan over medium-low heat. Bring the mixture to a simmer and cook while whisking gently for 5 to 7 minutes, until thickened slightly. Add the vanilla and cook another minute to thicken further. Turn off the heat and pour the sauce into a jar. Refrigerate until cold. If the caramel sauce has cooled in the fridge long enough to harden, warm slightly before drizzling on bars.

Brownies for a Crowd

I have been using this recipe for over a year now. We love it. We like them even better the next day. Weird how some foods are like that. I also love that it makes a big sheet full, a great recipe for parties or family gatherings. The chocolate icing on top is SO GOOD! I have used it on other desserts, because we like it so much. Also, this is for a cookie sheet (with edges of course). Do not make it in a cake pan.

Brownies for a Crowd

3 cups sugar
1/2 cup + 1 Tbsp cocoa (I prefer Dutch-it is darker)
1/2 tsp salt
1 1/2 cups melted butter
5 eggs
2 1/2 tsp vanilla
3 cups flour
Mix together and spread on a buttered cookie sheet (standard stainless steel). Bake in a preheated 350 oven for 30 minutes. Be sure to not overcook. Frost

Frosting:
1/2 cup butter
3 1/2 tsp cocoa
6 TBsp milk
1 tsp vanilla
Powdered Sugar--just add until you get the consistency you want. If it gets too thick just add more milk.
Boil together, remove from heat and add powdered sugar. You can add nuts into the frosting or sprinkle on top if you like.

Chocolate Chip Cookie Brownies

These were brownie cookies bars were so super easy and fast to make, yet tasted like I spent all afternoon on them. LOVE that! I found the recipe on Tidymom.net.

 All you need is your favorite brownie mix and a pouch of Chocolate Chip Cookie Mix. Make sure you get the brownie mix box that is for a 9 x 13 pan size.
Follow the directions on the box for making the brownies and pour into a greased 9 X13 pan.
Next, mix the cookie dough as directed on the pouch and drop by rounded tablespoons into the brownie batter. I pressed the dough down lightly into the brownie batter.
Bake at 350 for 35-40 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. When they’re done, take them out and let them cool completely.

Chocolate Ganache
12 oz. semi-sweet chocolate morsels
3/4 cup heavy whipping cream
6 Tbsp butter
  • In a small saucepan, heat cream and butter until just before the boiling stage.
  • Pour over the chocolate morsels.
  • Stir until smooth.
Pour ganache on top and spread it out evenly. You will want to let the ganache set up before cutting
Delicious I tell ya.

Oatmeal Brownie Bars

This recipe is an old family favorite. I have been making these since I was a young girl. They are always a huge hit! My boys loved helping me make these, too.


Oatmeal Brownie Bars

1 cup butter
1/2 cup brown sugar, packed
1 cup granulated sugar
2 eggs
1 cup flour
3/4 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
2 cups quick oats
12 oz pkg. chocolate chips
Powdered Sugar

Cream butter and sugar; add eggs and mix well. Mix in dry ingredients. Add 1/2 package of chocolate chips. Spread in 9x13 inch greased pan. Sprinkle top with reaming chocolate chips. Bake at 350 for 25-30 minutes. Cool and sprinkle top with powdered sugar. Cut into bars, and enjoy!

Peanut Butter Bars

I tried these out a few weeks ago. They were pretty darn good. Would have been better with some chocolate chips in them, though. I think next time I make them I will put some in.
Peanut Butter Bars

3/4 c. creamy peanut butter
3/4 c. butter softened
2 eggs beaten
1 c. sugar
1 c. brown sugar
1 1/2c. flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1 tsp. vanilla

Combine butter and peanut butter. Stir in sugars and vanilla. Add dry ingredients then beaten eggs. Bake in a greased 9 x 13 pan for 20-30 minutes. While warm, dust with powdered sugar and enjoy!
