Swirl Bars

Made these for Family Home Evening. If you love the combination of chocolate with peanut butter (which I do!!!), then you will LOVE these!!!



Swirl Bars

1/2 cup butter, softened
1/2 cup granulated sugar
1/2 cup firmly packed light-brown sugar
1/2 cup creamy peanut butter
1/2 tsp vanilla extract
1 cup flour
1 cup oats
1/4 tsp salt
6 oz semi-sweet chocolate chips (about 1 cup)

Icing:
1 cup confectioners sugar
1/4 cup peanut butter
3 Tbsp milk

Heat oven to 350 degree's. Grease a 9x13 inch pan and set aside. In large bowl, beat the butter, sugars, peanut butter and vanilla until smooth.
In second bowl, whisk together flour, oats and salt. On low speed, beat flour mixture unto butter mixture until just combined. Press dough into prepared pan. Evenly sprinkle chocolate chips over the top. Bake at 350 for 20 minutes.
To make icing: In medium sized bowl, blend confectioners sugar, peanut butter and milk until smooth. Pour icing over the uncut bars while still warm and swirl chips with icing. Cool completely and cut into 16 bars.

Ranch House Crock Pot Pork Chops with Parmesan Mashed Potatoes

Wow!!! This dish was so very yummy!!! Total "comfort food"!!!!! Definitely a must try!!



Ranch House Crock Pot Pork Chops with Parmesan Mashed Potatoes

6 pork chops, 1/2 inch thick
1 packet dry Ranch Dressing Seasoning
10 oz can Cream of Chicken Soup

4 lbs peeled, cubed potatoes
5 Tablespoons real butter
1 Cup fresh grated Parmesan cheese
6 cloves garlic, minced
1- 1 1/2 Cups warm skim milk (any milk will do, I just happened to use skim)
1 Tablespoon salt, or to taste
1 teaspoon fresh cracked black pepper, or to taste

1. Place pork chops, Ranch seasoning and soup into a medium sized crock pot over high heat for 4 hours or low heat for 6 hours.

2. Place potatoes into a large pot of cold water. Place onto stove top over high heat and bring to a boil. Once water is boiling, cook for 10-12 minutes or until potatoes are fork tender. Drain and transfer to the work bowl of a stand or electric mixer. Mix on low until potatoes are mashed then add butter, Parmesan, garlic, milk, salt and pepper. Season to taste if needed. For thinner mashed potatoes add more milk, slowly until your desired consistency.

3. Scoop mashed potatoes onto serving plates and top with pork chops and soup gravy from crock pot. Enjoy!

Chewy Oatmeal Scotchies

I just LOVE chewy cookies, and these were very chewy!! Enjoyed them with some delicious Hot Chocolate!!! Yum!!!!



Chewy Oatmeal Scotchies

1 1/4 cup flour
1 tsp baking soda
1/2 tsp ground cinnamon
1/2 tsp salt
1 cup butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
1 tsp vanilla
3 cups oatmeal
11 oz. pkg. Butterscotch morsels

Preheat oven to 375. Combine flour, baking soda, cinnamon and salt in small bowl. Beat butter, granulated sugar, brown sugar, eggs and vanilla in large mixer bowl. Gradually beat in flour mixture. Stir in oats and butterscotch. Drop by rounded tablespoons onto ungreased baking sheets.
Bake for 7-8 minutes for chewy cookies (the BEST in my opinion!!), 9-10 minutes for crisp cookies. Cool completely on wire racks.

Oatmeal Brownie Bars

This recipe is an old family favorite. I have been making these since I was a young girl. They are always a huge hit! My boys loved helping me make these, too.


Oatmeal Brownie Bars

1 cup butter
1/2 cup brown sugar, packed
1 cup granulated sugar
2 eggs
1 cup flour
3/4 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
2 cups quick oats
12 oz pkg. chocolate chips
Powdered Sugar

Cream butter and sugar; add eggs and mix well. Mix in dry ingredients. Add 1/2 package of chocolate chips. Spread in 9x13 inch greased pan. Sprinkle top with reaming chocolate chips. Bake at 350 for 25-30 minutes. Cool and sprinkle top with powdered sugar. Cut into bars, and enjoy!
