Pumpkin Waffles and Buttermilk Syrup

I love waffles!! I am not a big breakfast eater, but waffles are one of my FAVES!! And this buttermilk syrup?! Well, it was just to DIE FOR!!!! Oh so yummy!! This would make a great Christmas morning breakfast, I think! Enjoy!!



Pumpkin Waffles

2 C flour
2 Tbsp baking powder
2 Tbsp. cinnamon
1 Tbsp. sugar
1/2 tsp nutmeg
1/4 tsp salt

Mix ingredients together, then add:

4 egg yolks (save egg whites)
1 C pumpkin
1 Tbsp vanilla
1 1/2 C milk
3/4 C melted butter

Beat 4 egg whites until stiff peaks form and fold them into batter.
Cook in waffle iron

Buttermilk Syrup

1 cube butter
1 cup sugar
1 cup buttermilk
1 Tbsp. vanilla
1 Tbsp. corn syrup
1/2 tsp. baking soda

Bring first five ingredients to a boil. Add baking soda. Boil 10 seconds and remove from heat immediately to avoid boil over. (I just stood by it and kept stirring it and let it boil about 5 minutes. It made the flavors REALLY blend together!!!!!)
