Monster Cookies

My friend Amber gave me this recipe some time ago. I FINALLY got around to trying them out. These cookies were SOOOOO YUMMY!!!! And I just love the name of them...though, I couldn't figure out why they were called Monster cookies...that is, until I made them!! They are called Monster Cookies (this is my own opinion) because they made a Monstrous Amount!!! No Joke!!! LOL!!! That's okay though, we LOVE cookies!! Thanks for the recipe Amber!!!



Monster Cookies

3 eggs
1 1/4 cup packed light bromw sugar
1 cup granulated sugar
1/4 tsp salt
1/4 tsp vanilla
1/2 of a 24 oz. jar peanut butter
1 stick butter, softened
4 oz. M&M's (I used 6 oz)
4 oz. chocolate chips (also used 6 oz.)
1/2 cup raisins (optional)
2 tsp baking soda
4 1/2 cups Old Fashioned Oatmeal (not instant)

1. Preheat oven to 350 degree's. Line cookies sheets with parchment paper or nonstick baking mats (I didn't have either, so I just very lightly greased each sheet the first time, and it was fine through every batch).
2. In a very large mixing bowl, combine the eggs and sugars. Mix well. Add the salt, vanilla, peanut butter, and butter. Mix well. Stir in the M&M's, chocolate chips, raisins (if using), baking soda, and oatmeal.
3. Drop by tablespoonfuls 2 inches aprt onto the prepared cookie sheets. Bake for 8-10 minutes. Do not overbake. Let stand for about 3 minutes before transferring to wire racks to cool. When cool, store in large re-sealable plastic bags.

OH and that recipe you posted is halved. I made the mistake and make a full batch once and ended up with almost 10 dozen cookies. I think they're called Monster cookies cuz so much stuff is in them. Hm?? That doesn't really make sense either. I don't know. But they're yummy and they're a good Halloween/Fall time cookie for some reason.
