I have been crazy about the combination of White Chocolate and Peanut Butter lately. I was really wanting to come up with a cookie that could combine the two. I love peanut butter cookies, but they need to be chewy. We are a chewy cookie household...we don't like crunchy cookies (except for Oreo's, that is the only exception!! LOL!!). So, I came up with this creation, and they were 2 DIE FOR!!!! So, so yummy....we have made them 2 times in the last few weeks!! And they make ALOT!!!!
Chewy Peanut Butter White Chocolate Chip Cookies

1 cup butter, at room temperature
1 cup peanut butter
1 cup brown sugar, packed
1 cup sugar
2 eggs
2 tsp vanilla
1 1/2 cups flour
1 tsp baking soda
1/2 tsp baking powder
1 tsp salt
2 cups oatmeal (I have used both quick oats and regular oats and both worked fine)
2 cups White Chocolate Chips
Cream together butter, peanut butter, and sugars. Add eggs and vanilla.
In another bowl, mix together flour, baking soda, baking powder, salt
and oatmeal. Stir dry ingredients in with wet ingredients. Mix in White Chocolate chips. Drop by
tablespoon fulls onto cookie sheet. Bake at 350 for 9-11 minutes. Cool on wire rack.
